Snails baked with mushrooms and garlic butter
Snails ‘Julius Caesar’
12 x Snails in cup mushrooms, garlic/herb butter and breadcrumbs.
We named this dish back in the 80’s after two waiters that used to work with us, one was name Julius and the other Caesar! They both had a love for the dish and would regularly ask for them as their staff meal.
Although snails are often associated with French cuisine, you may be surprised to know they are cooked and eaten in abundance in north Italy and then further south in Sicily you can find they use the sea snail variety cooked with chilli or in pasta.
At the restaurant in early Spring we quite often do a risotto with nettles and snails, watch out for this it’s absolutely delicious. This version with the two earthy flavours of mushrooms and snails, truly is a match made in heaven!
Method: Pre-heat the oven to 230c and baked for 12-14 minutes. Serve with some crusty bread.
