Bollito Misto – Mixed meats cooked in their own juices.
This is a great winter celebration dish. It is found in other regions, but this version is very typical of Piedmont. Gran bollito combines at least five different types of meats, and has accompanying sauces: salsa verde and mostarda do Cremona (fruits candied slowly in a sugar syrup and flavoured with an essence of mustard).
Cotechino (succulent Italian sausage)
Selection of vegetables and potatoes
Salsa verde (green sauce)
Mostarda (mustard fruit).
Simply remove from the packaging and bring to the boil, allow to slowly simmer in its own juices for 15 minutes.
Place the meat in a bowl, pour the juices over the top and serve the 2 condiments on the side.
