There are two authentic and traditional versions of Amaretti: Amaretti di Saronno – Lombardy and Amaretti di Sassello – Liguria. The first, Amaretti di Saronno, usually remains crispy and dry and is often used as an ingredient in Italian dessert recipes or simply crushed over ice-cream. The second, Amaretti di Sassello, is the method we use at Shambles to achieve the gooey and yummy nutty centre.
Eat them all quickly before they dry out. Otherwise, use them crushed on top of ice-cream.
