Morelli – egg free pasta
Fregola is a small pasta typical of Sardinia. It’s made of durum wheat semolina and water. Rolled by hand and then roasted in the oven, almost bread like. This pasta is unique and cooked to a similar consistency to risotto. Not often found in other Italian regions.
Traditional recipes are with clams and tomato. However, they work great in salads and soups too.
Cooking time – Boil for 12 minutes.
